The Wi-Fi model gets One UI 5.0 in Europe with firmware version X200XXU1CVL5, while the update for the LTE version in the Old Continent comes with firmware X205XXU1CVL6. The LTE model is receiving One UI 5.0 with firmware version X205XXU1CVL5.
If you live in any of these countries and you haven’t received One UI 5.0 on your Galaxy Tab A8 10.5 (2021) yet, you can now download and install the update by navigating to Settings » Software update on your device and tapping Download and install.
